This is especially due to the many different grape varieties. Grape varieties explain the geography of wine, the result of large-scale migrations or exclusive cultivation, and the diversity of the landscapes where wine making has become established. But the plants cultivated by humans are classified according to their subspecies or<span>\u00a0<\/span><b>\u201cgrape variety\u201d<\/b>. The biological characteristics of varieties of grape have a direct influence on the wine\u2019s taste. Sugar content (depending on the photosynthetic activity of the leaves), acidity, tannin and organoleptic aromas are partly linked to the grape variety used by the winegrower. Certain grape varieties can cover an entire region: in<span>\u00a0<\/span><b>Burgundy<\/b>, a vast number of<span>\u00a0<\/span><b>white wines are made from Chardonnay<\/b><span>\u00a0<\/span>and<span>\u00a0<\/span><b>red wines from Pinot Noir<\/b>. The grape varieties can also be<span>\u00a0<\/span><b>blended<\/b><span>\u00a0<\/span>once harvested: the<span>\u00a0<\/span><b>Bordeaux grand crus<\/b><span>\u00a0<\/span>are generally an \u201cassemblage\u201d of different grape varieties cultivated in defined areas. Vineyards where this subspecies is grown are thus found in<span>\u00a0<\/span><b>the United States<\/b>,<span>\u00a0<\/span><b>South America<\/b><span>\u00a0<\/span>and<span>\u00a0<\/span><b>Australia<\/b>. This grape variety is thought to have originated on the<span>\u00a0<\/span><a href=\"https:\/\/escales.ponant.com\/plus-belles-iles-monde\/\"><b>volcanic island of Santorini<\/b><\/a>, through the \u201cdomestication\u201d of wild grapes. The<span>\u00a0<\/span><b>koshu,<span>\u00a0<\/span><\/b>for example, is thought to have taken the Silk Road from the shores of the Caspian Sea and is now<span>\u00a0<\/span><b>the finest Japanese grape<\/b>. The local vineyard, in the foothills of Mount Fuji, has to cope with heavy rainfall, making this<span>\u00a0<\/span><b>pink grape<span>\u00a0<\/span><\/b>a particularly resistant fruit.
